Wow! It has been soooo long since I have posted on here. It's hard to keep up with this while at school, unfortunately! Thankfully I am on spring break so hopefully I can knock out a few posts before I go back!
With that said today I am going to share a recipe I found on Pinterest, of course! Last night I cooked it for dinner and it turned out pretty good! My brother said he liked it and if he likes it, it must be good! Can we say picky eater?! LOL.
So here it is! Twice Baked Potato Casserole!

Ingredients:
1-1/2 pounds red potatoes (about 6 medium), baked
1/4 teaspoon salt
1/4 teaspoon pepper
1 pound sliced bacon, cooked and crumbled
3 cups (24 ounces) sour cream
2 cups (8 ounces) shredded mozzarella cheese
2 cups (8 ounces) shredded cheddar cheese
2 green onions, sliced
Directions:
Cut baked potatoes into 1-in. cubes. Place half in a greased 13-in. x 9-in. baking dish. Sprinkle with half of the salt, pepper and bacon. Top with half of the sour cream and cheeses. Repeat layers. Bake, uncovered, at 350° for 20-25 minutes or until cheeses are melted. Sprinkle with onions. Yield: 6-8 servings.
I made a few changes to the recipe while I wass making it. Instead of baking my potatos I boiled them ( I guess that technically wouldn't make mine a "twice" baked potato casserole lol)
I did not measure my salt and pepper, I just sprinkled a bit on each layer.
I used bacon bits, and just sprinkled as much as I wanted in each layer, while my boyfriend was standing behind me telling me if I was putting enough bacon bits on it, Lol.
I also did not use that much sour cream, to me that seemed like too much and on the site people mentioned that it was too much. Instead I just took a knife, scooped some out and evenly spreaded it on each of my layers.
I didn't top mine off with onions, after I put my last layer of potatoes on, I sprinkled some salt, pepper, some bacon and then lots of cheese.
I liked that this was one of those recipes that you could kinda improvise and do it how you wanted, as you saw I altered quite a few things.
In the end it turned out well! I wish I would have added some sort of meat with it, like sausage as my mom kept saying lol.
But anyway, thats the recipe for the day! So go make some potatoes!
